German Apple Pastry - Apfeltaschen Recipe

This is a recipe for a delicious German apple pastry or Apfeltaschen in German (apple pockets). To make them you would use the Kathi German Yeast Dough Baking Mix. You just need to add some fresh ingredients. Perfect for baking beginners. Happy Baking!

Ingredients German Apple Pastry

Makes 10 apple pastries

For the DOUGH
For the FILLING
  • 3-4 medium sized apples 
  • some lemon juice
  • 2 tbsp sugar
  • ½ tsp cinnamon
  • 50 ml water
  • 1 egg

Baking Instructions German Apple Pastry

Make the Dough
Combine Baking mix with the yeast.
Add butter, egg and water.
Knead for about 3  min with a hand mixer and kneading hooks until you get a smooth dough.
Cover dough with a clean kitchen cloth and let raise for 30 min at a warm place.

Make the Filling
Peel apples, remove cores, cut into small cubes.
Combine with lemon juice, sugar and cinnamon, mix well.
Knead the dough with hands briefly and separate in 10 pieces.
On a smooth surface sprinkled with flour roll each piece into a rectangular shape
5x6 inches, 14x16cm).

Place on each piece 2 tbsp of the filling on one half.
Separate one egg. Keep egg yolk separate and beat it lightly.
Use the egg white to brush all around the edges of the one with the filling.
Place the other half of the dough on top.
By using a fork or the back of a knife press the edges tightly together.

Layer a baking sheet with parchment paper.
Place the pastries on the sheet, brush the egg yolk on top, let sit at a warm place for 15 min.
Carefully cut the surface of each pastry horizontally several times (see photo).

Bake for 20-25 min on 360 F in preheated oven.
