German Yeast Dough Pastries

German Pastries Yeast Dough Recipe

This is a recipe for delicious German yeast dough pastries. To make these pastries you would use the German Kathi yeast dough baking mix, it's called in german Hefeteig mix. You just need to add some fresh ingredients. This recipe includes different fillings for the pastries.
So perfect for baking beginners. Happy Baking!

INGREDIENTS German Yeast Dough Pastries

For the Dough
1 Kathi yeast dough baking mix


60 g butter
180 ml water

For the Fillings
Hazelnut Filling:  200 g  ground hazelnuts, 100 ml milk, 80 g sugar, 1 egg, 1 package vanilla sugar , vanilla flavor, ½ tsp cinnamon and 1 dash salt.  Mix all ingredients well.

Poppy Seed Filling: 250 g poppy seed filling (MohnBack), raisins to taste. Mix all ingredients well.

Cinnamon Filling: 60 g soft butter, 120 g sugar and 5 g cinnamon. Mix all ingredients well.  

Quark Filling: 250 g quark, 1 egg, 50 g sugar, 10 g starch, 25 g liquid butter, 1 egg yolk. Mix all ingredients well.

Baking Instructions

Make the dough per instructions, let raise at a warm place for 30 min. Dough should double.
Meanwhile prepare the desired filling.

On a smooth surface that is sprinkled with flour roll the dough to a rectangle, size 30x30cm or 12x12 inches.
Pre-heat oven to 180 C or 350 F.

Spread the filling on top.
Roll the dough starting at the long side. 

Cut the roll in 2 cm or 1inch thick slices.
Layer a baking tray with parchment paper.

Place the slices on the tray.
Bake for 15-20 min in pre-heated oven.
